Pumpkin Banana Nut Bread

This bread is pretty incredible. I saw the recipe at Skinny Taste and knew I had to make it. Today was grocery shopping day…so I picked up the things I didn’t have on hand (pumpkin, pumpkin pie spice, walnuts) and got to work. It’s SO good. Both the pumpkin and banana tastes are strong, but go very well together.

Recipe (courtesy of Skinny Taste, altered slightly by me):

Pumpkin Banana Nut Bread
Ingredients:

  • Pam baking spray
  • 3/4 cup unbleached all purpose flour
  • 1/2 cup white whole wheat flour
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 3 very ripe medium bananas, mashed
  • 1/2 cup pureed pumpkin
  • 2 tbsp light butter, softened
  • 1/2 cup light brown sugar, unpacked
  • 1/4 cup eggbeaters
  • 1 tsp vanilla extract
  • 1/4 cup chopped walnuts

Directions:

Preheat oven to 325°. Grease a 9×5 inch loaf pan with baking spray.
In a medium bowl, combine flour, baking soda, pumpkin spice and salt with a wire whisk. Set aside.

In a large bowl, cream butter and sugar with an electric mixer. Add egg whites, egg, bananas, pumpkin and vanilla, and beat at medium speed until thick. Scrape down sides of the bowl.
Add flour mixture and nuts (if using), then blend at low speed until combined. Do not over mix.

Pour batter into loaf pan and bake on the center rack for 60 minutes, or until a toothpick inserted in the center comes out clean.

Let the pan cool at least 20 minutes, bread should be room temperature before slicing.

Aside from the occasional baking (the bread above, obviously…and chocolate chip peanut butter cookies, mmm) and running, I have been spending all of my time puppy training and studying. I can’t believe the LSAT is a little over a week away. That makes me want to cry.

Sorry I’ve Been a Little MIA…

I promise I have good reasons.

The first couple of nights…

Annnnd, today…

She’s precious. You may be wondering what her name is. Weeellll…I haven’t decided on one yet. I’m currently considering Penelope (Penny for short), Bella or Belle, and Fiona (Fi – pronounced ‘fee’, for short). I’m still not sure. I didn’t really want to go with an ‘ee’-ending name, since we already have three dogs with those kinds of names. But, for some reason Penelope is still standing out to me. I guess I’m going to just wait until something feels and sounds right. :)

Hopefully this sweet little girl will let me manage a semi-normal schedule again soon. I’m so thankful to have the help of my parents! My dad is already 100% in love with her (though not my name choices…oh well!).

On tomorrow’s agenda: LSAT studying, a run, and lots of puppy love with my three girls. The only things missing are my siblings and Molly. :(

Wednesday Things

I apologize for the lack of Wannabe Wednesday posts the past couple of weeks. I’ve been quite busy with moving home, working, LSAT studying, etc. and haven’t had enough time to feed my online shopping addiction! I do plan to get those posts back up and running soon, just not today.

Because today…today is another busy day. I’m at work for a couple of hours now, then I need to go home, get ready, and get my stuff together to head back over to Grand Rapids for the Pat Benatar concert! My mom and I are only going over for the night, and will be back in the early afternoon tomorrow…so it’s just a quick mini trip.

That’s probably a good thing, because I’m starting to get really stressed about law school. On top of studying, I’m trying to get my other ducks in a row as far as applications go. Right now my main focus in this respect is to my get official transcripts all sorted (which, in the case of UCL, is a major headache) and to get my references figured out. It’s only August, yet I feel behind on all of this somehow.

There is no doubt — this process is mega stressful.

For today, I’m going to try and forget about it a little and enjoy the concert with my family and friends. Tomorrow…back to the grindstone.
